The Sardalice

 

A dish like this expresses the happiness of being a cook, of nourishing much more than the body. A meat jus with champignon and porcini mushrooms, a crunchy element made with the ingredients of the pasta con le sarde, anchovies marinated in salt, sugar and smoked oil are all added to the sautéed spaghetti.
Then, on the table, the wonder is completed with grated tuna heart of Testa Conserve. Simple? Complex? Memorable.
