Wine of the month: Chardonnay San Francesco Tasca d’Almerita vineyard 2018

 

«The new vintage of Tasca family’s grand cru stands out for its contrasts – says Antonio Currò, sommelier of Ciccio Sultano’s restaurant. If the colour is in line with the grape variety for its golden and luminous yellow, the nose begins to perceive scents of flowers, freshly picked and ripe fruit, vanilla in all its forms, as well as pastry aromas. In the mouth, the contrasts feel even more evident, making the wine unique». The acidity of the youth winks at the structure of the wine, while the sapidity plays with the body, a characteristic of San Francesco’s vineyard. It ends in a precise and elegant way that makes it a pleasant pairing for the red mullet, a tribute to De Coquinaria di Apicio, by Ciccio Sultano. The dish is among the twelve recipes collected in the first book by Cantieri Sultano dedicated to the Sicilian dominations.
