My cuisine at Giano Restaurant, within the W Rome, is rustic and contemplative, elegant and refined. The definition of gourmet is first expressed through the perfect delivery of each recipe. I would describe it as a #cucinaeducata (an educated cuisine), based on authenticity: fine, strong, Sicilian by birth and international by vocation. The choice of the ingredients is based on a personal relationship of trust with the suppliers that, together with Giano’s executive chef, Nicola Zamperetti, we have strengthened with a local selection. It’s a cuisine that lacks nothing in terms of technique, without the need of appearing sophisticated; complex for the concept and research behind it, but allergic to complications.
