It’s a praiseworthy dessert in the form, flavours, and impressions it leaves.
«It is the fruit that has changed the history of humankind, so full of meanings – says Fabrizio Fiorani, pastry chef at Ciccio Sultano’s Restaurant. You will find a green apple sorbet and red apple juice in the form of cream, but without butter, to which we add the caramelized apple, lightly stir-fried. We travel in this way from the memory of the original sin to homemade cakes.
«Finally, to give a touch of performance to the recipe, there is dulcey chocolate with its characteristic biscuit notes». It’s a dessert with geometric strength and a great visual impact.
