Demeter, a cocktail that is as good as bread

 

One of the cocktails at Cantieri Sultano, open in August, is called Demeter, as one of the two protagonists, together with her daughter Persephone, of the Sicilian founding myth of agriculture. And it’s not a coincidence: the drink, created by Mattia Cilia, bar manager of the Sultano Group, is made with Champagne Delamotte, a self-produced toasted bread cordial made with Polugar Single Malt Rye, bread crust and cocoa bean peel’s bitter. The champagne notes with hints of brioche bread are so accentuated. And there’s more: the cup’s rim is partially covered with a crustas of toasted cereal. As you bring the glass to your lips, you can taste the contrast between solid and liquid textures and the feeling of something freshly baked. Photos: Giuseppe Bornò.
