The cows’ welfare

 

Alessandro Criscione, who has a farm since 1928, is our supplier for the cosacavaddu, the Hyblean caciocavallo, and fresh ricotta.
Criscione milks his cows twice daily, getting the cheese ready to be processed within twenty-four hours. With no additives, preservatives or colouring, the cheese is as natural as possible, available in two types: semi-mature (sweeter) and mature (tastier). Criscione’s company has just received the Crenba, the animal welfare certificate, concerning the entire cycle of production on the farm. Cow welfare entails feeding, clean water, the pasture, time in the shade, cleaning, and so on. Everything is driven by great respect towards the environment and the process that guarantees healthier animals, fewer antibiotics and, consequently, more nutritious milk. Right now, some of Criscione’s cosacavaddu have reached thirty months of ageing.
