Spring red mullets

 

The red mullets meet the countryside and fresh broad beans with their sprouts: they are the May highlight.
«We fry them in very little extra-virgin olive oil, – says Ciccio Sultano – so to keep the dish healthy». Together with broad beans, we add the onion and black olives. Sicily is a natural vegetable garden surrounded by the sea.
